today let's say something about one dish in Sichuan,
and I believe it is one of the only dishes in all Chinese cuisine
that has almost the same pronunciation in Chinese and English,
yes it is mapo tofu,

sounds almost the same with its Chinese name,doesn't it?

mapo tofu,a popular dish in Sichuan has a history dating back to the year of 1862 of the Qing dynasty,
its name translates to pockmarked grandma's tofu
due to a lady with pockmarks on her face.

according to legend she was a widow who ran a small restaurant near Wanfu Bridge in Chengdu,
she used a special blend of spices and Sichuan peppercorns and created a unique flavor 
that people loved so much.

the dish became so popular and it was eventually named after her
and continues to be a beloved dish to this day.

Mapo tofu is made with tofu ,ground pork , fermented broad bean paste and Sichuan peppercorns
it is served in a spicy sauce that is thick and savory with a slightly numbing sensation from the peppercorns,
the dish is often garnished with chopped scallions and chili oil to add extra kick of heat,

it can be served with rice or on its own as a main dish ,
over the years,
mapo tofu has become a staple dish in Sichuan cuisine and has gained popularity worldwide .
its unique flavor and texture has made it a favorite among spicy food lovers
and it is a must try dish for anyone visiting Chengdu.
